Someone made a comment on my site about making oatmeal. I am motivated to give you the recipe in a spot where you will not have to dig through my comments section. This is from my recipe book Whole Grain Gastronomy:
1 1/2 C Water
pinch of salt
some raisins
1 C oatmal
Bring the water, salt, raisins to a boil. Add oatmeal, stir to mix and when the mixture returns to a boil, put the cover on the pan and remove it from the heat. (If you have an electric stove, I advise you to move the pan to another burner.) Let it sit for 7 to 10 minutes, and serve with honey and milk.
For an extra taste treat: replace 1/3 to 1/2 the liquid with coconut milk (NOT pina colada mix or any product that lists corn syrup as an ingredient). This bumps up the calories considerably, but it also makes it the perfect meal to eat before you go skiing or hiking. You can also garnish with toasted almonds (or other nuts) and toasted coconut.
Well, that’s how I’ve always made oatmeal. Except without raisins. And rather than honey and milk I’ve always served it with a small dollop of butter, a teaspoonful of brown sugar and a bit of milk. The butter and brown sugar make a sort of caramelly thing on top of the hot oatmeal. I like taking a small bit of that mixture with a spoonful of oatmeal, dipping it in the milk at the side of the bowl and eating it like that, rather than mixing it all up together.
mine is a little different. I use the Irish steel cut and it takes longer to cook so make several serving and save some for the future.Any dried fruit works well and I usually use maple syrup. Also a chopped apple works well.Put half in while cooking and the rest just before serving.
We love dried cranberries and walnuts with a little cream and brown sugar. We used the rolled oats and the microwave. Does it quick, easy and already in the bowl. Yumm….now if the weather would get colder…we’re in the upper 60’s, low 70’s
